Picture 1 – Chicken & cheesy sweet potato Alfredo pasta
– Boil fettuccine pasta for 6-7 mins and don’t forget a pinch of salt and olive oil so the pasta doesn’t stick
– Chicken thighs seasoned with paprika, all Italian herb, garlic and onion seasoning, bit of dark soya sauce and baking soda
– Pan fry the chicken for 6-10 minutes on mid heat
– Roast cubes of sweet potatoes for 20 mins at 220 degrees Celsius with the same season as the chicken + 2Tbsp of olive oil
– Add in your roasted potatoes
– Add 1 Cup of cream and let it simmer until the cream thickens
– Add whatever cheese you like and simmer on low heat for another 2 minutes then mix
– Add your chicken and potatoes to the pasta and mix, top with finely chopped parsley
Picture 2 – Chicken and cheesy potato with rice and broccoli
– I had some leftover chicken so I just simply boiled broccoli and added rice
Picture 3 – Pork fillet with gravy, rice and steamed veges
– Season the pork with soya sauce, garlic seasoning, salt and pepper
– Sear the pork in a pan until light brown
– Pop your pork in the oven at 210 degrees Celsius for 30 mins. These cook pretty quickly.
– Boil whatever veges you like. I used broccoli and sweet potatoes. Rice is optional.
– Gravy was made with the juices from the pork after it finished roasting in the oven.
– Tip the pork juice into a pan/pot and add 50g of unsalted block butter and stir.
– Add in Campbell chicken stock depending on how thick or watery you want your gravy
– Optional: mushrooms (I didn’t have any)
Picture 4 – Spaghetti beef mince with garlic bread
– Dice one onion and 3x cloves of crushed garlic and fry in a pan with 1 Tbsp of olive oil.
– Once the onions appear translucent, add in your beef mince and stir every 2-3 mins until mince is browned
– Add in your choice of pasta sauce and chopped tomatoes (I didn’t have any chopped tomatoes)
– Add salt and pepper
– Boil your spaghetti for 6-7 mins and don’t forget to add 1 Tbsp of olive oil and pinch of salt
– Once they’re all cooked, it’s up to you if you want to mix that pasta and mince in a pot or distribute it evenly into your containers
– Garlic bread was made with mini French sticks and I used block butter and crushed garlic and chopped parsley for the spread.
– Bake your garlic bread in the oven at 210 degrees Celsius for 10-15 mins.
