Creamy tortellini soup with sun dried tomatoes and spinach

  1. **Recipe for two**

    1 yellow onion

    250 g tortellini with basil

    1 dl sun-dried tomato

    4 cloves of garlic

    1 tsp chili flakes (optional)

    1 tbsp basil, dried

    2 dl whipped cream

    1 liter of vegetable stock (2 cubes in 1 liter of water)

    1-2 handfuls of spinach

    1 dl grated cheese

    Parmesan cheese

    Black pepper

    salt

    lemon

    **Do as follows:**

    Chop the onion, garlic and the sun-dried tomato. Sauté the onion and garlic in the oil from the sun-dried tomatoes. Add the chili flakes and basil. Fry for an extra minute and add the stock and cream. Cook for 10 minutes. Add the spinach and tortellini. Cook for 2 minutes and stir in the cheese. Add lots of black pepper and season with salt and lemon juice. Top with lots of parmesan.

  2. I’d assume the tortellini would soak up the soup, does this happen with you? I have to meal prep liquid separately if I’m doing soupy noodle dishes or they just bloat lol.
