Sunday dinners are always special, but when my mama’s homemade gnocchi is on the table, they become unforgettable 🤗

Gnocchi con patate
Ingredients:
6 med potatoes
2.5 cups of 00 Caputo flour
Pinch of salt

Instructions:
Boil potatoes and discard the skin. Mash potatoes and spread on a wooden board. Add your flour, salt and combine well. Create a ball and roll out on a well dusted board. Cut the ball into smaller pieces.
Roll each piece between your hands into 1/2 inch rope (about twenty inches long. Cut the dough into 1 inch pieces and begins to roll with index and middle finger or using your wooden paddle with ridges. Dust your gnocchi as you go.
Bring a large pot of salted water to boil. Once boiling , add your pasta and stir well to prevent sticking. Continue to cook until the gnocchi are soft and fluffy.
When fully cooked, strain well and add the sauce of your choice. Enjoy !
