These chopped jalapeños didn’t stay mixed with the rest of the jelly.
I made this jalapeño jelly yesterday and water canned it. The lids sealed and the jelly below the bits has set, but the bits are loose. I’m wondering what I did wrong for it to separate like this. Thank you for any help!

The recipe I use says to squeeze the peppers to remove as much moisture as possible. That helps it set better. Also says to flip the jars upside down to help disperse the peppers.

This is why I prefer to remove the seeds and puree everything for hot pepper jelly. I prefer a smooth product anyway.

When I’m putting hot pepper jelly into the water bath, I give the jar a couple of wrist swirls while it’s gripped in the jar lifter. I wouldn’t swirl it coming out but a good swirl on the way in helps.
