Manicotti are a much-loved baked pasta in our family, but in this case I use crespelle instead of fresh pasta to envelop the ricotta stuffing, resulting in a delightfully delicious, lighter version. Crespelle, Italian crêpes, are one of the most versatile recipes in the kitchen. You can use them shredded in soups, layered in lasagna, stuffed and rolled in manicotti, as I do here, or baked with vegetables and pesto – and if you add some sugar to the batter, you can make endless forms of dessert with them. I like to make a big batch of crespelle—once you get going, they are done in no time, and you can freeze or refrigerate the extras. For years, I’ve asked myself where the name “manicotti” comes from. Then, one day, I figured it out. When I was in a refugee camp in Trieste, I was enrolled in a Catholic school, and to supplement my tuition I would help the nuns in the kitchen. They wore big aprons, and on their arms, to protect the sleeves of their habits, they had tubes made out of white cloth with elastic edges on both sides. These sleeves covered their arms from wrist to elbow, and they were called “manicotti”; hence the name of tubular stuffed pasta that we now know as manicotti.

  3. I had an Italian friend, that used to make us homemade manicotti. It was one of the most lovely flavors I've had. I've also tried to make it myself. I don't have the umph like he did. Lol. Thank you Lidia🙏❤️

    Sometimes I actually FEEEL like I’m right THERE with you as you talk to ‘us’,,,ect,,, in fact I swear I can actually think I can taste this!,,, I adore Ricotta cheese!,,,and I’m starting to wonder if this is a psychosomatic issue,,, bc I all most feel full!!!! (Lol lol lol ) just looking at this casserole of pure PERFECTION!!!
    Joking aside,,, I can’t thank you enough,,, I’ve been extremely lonely,,, I’ve lost my only child,,, my son Richard,,, he’s soooo young,,, only just turned 29,,,, n therefore I’m a bit lost,,,, yet as I watch you cook n create so calmly and at ease,,,, it works wonders,,,, my greatest wish is to have my dream Italian kitchen,,, actually I’d settle for any kitchen!!   5. My family loves crespelles as the father they would have me take them every weekend, but I know better, Too often and they are no special anymore.
    I have never made the manicotti once always pasta ones.

  6. The very first Italian dish I made, 10 years old, I watched Julia Childs, make this exact traditional manicotti , it was delicious! My family was amazed, if I could do it at 10 years old, anyone can do it! I make it this same way to this day, 56 years later. Thank you for your videos!

  15. Growing up, my uncle made it this way. I was always disappointed ordering it In restaurants as they always made it with pasta shells. So I make my own with crepes and there's nothing better.!
