Grandma PP’s Deep Dish Pizza Dough
2 cups warm water
2 tablespoons sugar
2 tablespoons yeast
2 tablespoons olive oil (plus more for oiling other things)
5 cups flour (all purpose)
2 teaspoons salt
Combine water, sugar, yeast and oil in bowl of mixer and mix. Turn mixer on to speed 1 and start adding in the flour a cup at a time until 2.5 cups have been added. Add in salt and then continue adding in flour until the flour is incorporated and the sides of the bowl are clean. Knead for 3-5 minutes until a smoothish dough forms.
Meanwhile, oil a large bowl with olive oil. Once dough is done kneading, scrap it into the bowl, cover with plastic wrap and put it in the fridge for 24-48 hours.

About 2-3 hours before it’s time to eat, get the dough out of the fridge. Heavily oil an extra large sheet pan with olive oil or split the dough into two – placing each one in an oiled pan. Stretch the dough out slightly, using gravity, into the shape of the pan. Cover the dough with plastic wrap and let rest for 45-60 minutes or until it’s warm and easy to stretch.
Once the dough has finished resting and is soft and stretchy, oil it completely with olive oil, carefully flip the dough, and then push and stretch it to almost fit the pan.
Add desired toppings and bake the pizza at 500 degrees for 18-20 minutes. For an extra crispy top, cook for two more minutes under the broiler.
Let rest for a few minutes before slicing and serving!

Easy Pizza Sauce
1 14.5 can of Tomato Sauce
1 6 oz can Tomato Paste
1 tablespoon Italian seasoning
1-2 teaspoons of garlic powder
Mix all ingredients and use to your preference! It’s a simple sauce but it gives an intense tomato flavor.

If you are willing to do pizza "pies" you should try a Vermonter style pizza! It's perfect for fall. There's lots of recipes online, but my family brushes a garlic & oregano butter onto the unbaked pizza crust, then top with thinly sliced apples, pork roll, and sharp cheddar cheese! It's delicious!

How about a custard pie from Hawaii? Some people make it plain or you can add coconut. There's also a haupia chocolate pie with a shortbread crust that's also delicious. Haupia is just a type of coconut pudding/jello consistency deliciousness, Haupia is pronounced: how- pee-ah

My husband is a chef and finished his career as a pizza maker at Frank and Nicks he perfected the deep dish pizza dough. We love it when he makes it, he also lets it sit in the fridge overnight. Fantastic but I would have added cherry tomatoes capsicum and onion all thinly sliced. Once out of the oven put fresh basil and rocket to wilt on top. Then it would be perfection

We were going through a time of financial difficulty, and could not afford to take our 7 kids out for pizza, so I learned to make our own. Finances came around but we loved our Friday pizza night so much, that we kept it going. Word got out and friends started showing up on Friday nights. I would make dough for 6-10 pizzas. We loved interacting with our children's friends and family. After 6-7 years, one of my daughters called from her small college in OK asking if I could make pizza for the baseball team who were playing in a tournament near our home in MN. She said it was only 15 guys so I said yes. I about had a heart attack when a full-size bus pulled up to our house and 45 people got off.
I am not sure how many pizzas we cooked that night. It was a blur but so much fun!
I retired from making homemade pizza after that night, I was tired and so was my oven. I do miss it now and then, maybe this is the inspiration I need to start it back up!

Just like my Nonna always made it, Bellissimo ! The crunch on the bottom is the best. And yes all the olive oil makes a huge difference to the taste. Sooo soooo good and she too made it in rectangle dishes as there were ALWAYS many mouths to feed. And yes allowing the dough to rest and develop its flavour overnight is a must. Well done and it makes me happy this a favour and a regular for your family. My Nonna would be proud and please also. My family are from Napoli but I’m writing yo you from Australia. Thank you for making me hungry and remember my beautiful Nonna today through feeding your family. Nothing more Italian and loving then that ❤

How about making a wheat and sugar free pie that you can eat. I am also wheat (gluten) free and added sugar free. But a creative combination of fruit or dates could make a great pie.
