chicken cutlets with porcini mushroom pearl barley

    chicken simply done in egg wash & breadcrumbs, fried in butter. I pre-boiled the barley, then cooked it similar to a risotto with white wine, dried porcini mushrooms (and their stock), bacon, chicken broth, garlic, parmesan, marjoram, & butter to finish. perfect quick and tasty weeknight dinner! 🙂
