I just tried water bath canning for the first time last night! I filled the jars with apple slices then poured the syrup to just about the jar’s mouth line. (See first photo.) After letting the jars rest for 12 hours, I noticed the syrup is now resting above the line and in some cases, the apples are close to the lid. Is this okay?

    Did you follow a specific recipe? A safe tested recipe will have a recommended headspace not just “to just about the jars mouth line”
