i make this when i want something warm & comforting without a trip to the store 🫶
add 1 tbsp olive oil to a pot on medium heat. once hot, add half an onion, chopped. when the onion is translucent, i add a few cloves of minced garlic and a little crushed red pepper & cook for a minute, then add 2 tbsp of tomato paste & stir well. after a minute or so, i deglaze with a small glug of white wine. once everything has almost evaporated, i add 2 cans of tomatoes (crushed, diced, & whole would all work great for this!) & about a cup of water. i like to season with a small spoonful of veggie bullion & some dried herbs, but season however you like. I let everything stew together for about half an hour, then I take it off the heat, cut it with about a half cup of milk (can totally skip this if youre limiting dairy!) and blend with an immersion blender until smooth & serve!
if you dont have an immersion blender you could still make this with a few tweaks! (use cans of tomato sauce, mince the onions & garlic real small) but i would totally reccomend buying one. they are cheap & so nice to have on hand for blended soups & the like!
today I enjoyed it with toasted sourdough, fresh mozz, and roasted cauliflower 🙂 i am always surprised at how comforting and rich such a simple recipe can be when I make this!
