Pesto Pasta recipe:
Serves 1

1/2 cup Farfalline pasta (you can use any pasta of choice)
1/3 cup frozen sweet pea
2 tbsp plain greek yogurt
2 1/2 tbsp pesto pasta
1/2 tsp garlic powder
Salt + pepper
4 pieces Kirkland frozen breaded chicken breast chunks, cooked in the air fryer
Freshly grated parmesan cheese for topping

1. Start by cooking your pasta according to package. Add frozen pea in the pasta water. Place frozen chicken in the air fryer and cook according to package. Once pasta is cooked, save some of the pasta water on the side.
2. Take pasta off of heat. Save some pasta water. Drain then add in your plain greek yogurt, homemade pesto, and seasonings. If you want the pesto to be not as thick add in a tbsp of pasta water. Add freshly grated parmesan cheese and mix until everything is combined. Taste to see if more salt is needed.
3. Slice cooked chicken and add in pesto pasta. Top with grated parmesan and enjoy!

Homemade basil pesto recipe:

2 cups fresh basil leaves, packed
1/4 cup parmesan cheese
1/4 cup pine nuts
5 garlic cloves
1/2 cup + 1 tablespoon olive oil, divided
Salt + pepper to taste

Mix everything in a food processor until smooth. Taste to see if you need to add more salt or pepper. To store, save the rest in a jar with a little bit of olive oil on top or freeze in an ice chest to use for a later date.
