Today, I’m showing you how to make delicious Chicken Gyros with homemade Tzatziki Sauce! This recipe brings the authentic taste of Greek street food straight to your kitchen. Juicy, marinated chicken, fresh veggies, and creamy Tzatziki Sauce all wrapped in warm pita bread – what could be better? Let’s dive into this simple yet flavorful recipe! 🍋🥒🧄

📜 Ingredients:
MARINADE
✓ 2 cups plain full-fat greek yogurt
✓ ¼ cup lemon juice
✓ ¾ cup olive oil
✓ 1 tablespoon salt
✓ 1 tablespoon minced garlic
✓ 1 tablespoon paprika
✓ ½ teaspoon cayenne pepper
✓ 1 teaspoon black pepper
✓ 2 ½ lb boneless, skinless chicken thighs, pounded flat

1. Prepare the Marinade: In a bowl, mix 2 cups of yogurt, 3/4 cup olive oil, lemon juice, garlic, salt, pepper, paprika, and cayenne pepper. Stir everything well until combined. Cover with plastic wrap and set aside.

2. Prepare the Chicken: On a plastic cutting board, place the chicken thighs and clean them if needed. Cover with plastic wrap and pound them until they’re about 1/2 inch (1 cm) thick using a meat mallet, rolling pin, or heavy skillet.

3. Marinate the Chicken: Dip each piece of chicken thoroughly in the marinade. Once all the chicken is coated, stir again to ensure everything is well submerged. Cover with plastic wrap and refrigerate for at least 1 hour, or up to a full day, allowing the marinade to infuse into the meat.

4. Prepare the Skewer Base: Cut an onion in half, using one half as the base and reserving the other half for later. Thread a skewer through the onion half and position the skewer vertically, like a spit.

5. Skewer the Chicken: Remove the marinated chicken from the fridge, discard the plastic wrap, and stir again by hand. Thread the chicken thighs onto the skewer, rotating each piece 90 degrees as you go. Once all the chicken is skewered, tuck any small pieces between the larger ones, then pour the remaining marinade over the top.

6. Bake: Preheat the oven to 400°F (200°C). Roast for 1 1/2 to 2 hours. If you can measure the internal temperature of the meat, it should reach 165°F (75°C).

7. Make Tzatziki Sauce: While the chicken is baking, make the tzatziki sauce. You’ll need for TZATZIKI SAUCE:
✓ 1 large cucumber, shredded
✓ 2 cups plain full-fat greek yogurt
✓ 1 tablespoon minced garlic
✓ ¼ cup lemon juice
✓ 2 tablespoons finely chopped fresh dill
✓ 2 tablespoons finely chopped fresh parsley
✓ kosher salt, to taste
✓ freshly ground black pepper, to taste
✓ ½ large yellow onion, peeled and root end removed

Grate the cucumber onto a cloth or paper towel, then squeeze out as much juice as possible. Discard the juice, and return the squeezed cucumber to the bowl. Add yogurt, lemon juice, garlic, salt, pepper, parsley, and dill. Mix everything well. Cover with plastic wrap and refrigerate for at least 30 minutes.

8. Serve: Once the chicken is done, slice it thinly, about 1/4 inch thick. To serve, fill a Greek pita with sliced chicken, chopped onion, and tomato, then drizzle with tzatziki sauce. Alternatively, you can use a flatbread like lepinja (recipe on my channel), cut it in half, fill it with chicken, onion, and tomato, and add either kajmak or tzatziki sauce—whichever you prefer.
