I decided to make my girlfriend a steak since its her birthday yesterday and It didn't go well as you all can already see. I bought an iron skillet about 3 weeks ago knowing and wanting to start learning about frying steaks and making sauces, but I guess its harder than what youtubers make it look and what google tells me to do. I believe I overcooked it by me trying to make a steak crust. I guess the chimichurri sauce and mushrooms that I made saved it with the flavor.

    Well, you’ll get the hang of it. I’ve seen and had worse. Usually when I see steak like that I know it is time to add a lot of sauce and eat it in strips like you cut it. You did the right thing to salvage the steak, imo

    It’s a well-done steak, which isn’t most people’s preference, but it’s not a fail.

    The insides still look juicy, and there’s a pretty good crust on it!

  5. It happens, even to people that cook steak all the time! My advice, get a good instant read thermometer (I like thermoworks). Keep in mind steaks will have carryover cooking up to 10degrees after they’re off the heat source too. If I want medium rare, I pull mine at about 125 and let them rest for 5-10mins

    Use it for tacos, burritos, toss in a scramble or omelette etc. If you didn’t eat it all already.

    It looks like a juicy well done, maybe even medium well in a couple places. Dump some Rudie’s BBQ sauce on that and it’ll taste just fine

    Sometimes I still overcook steak if I had a couple too many beers, all a part of the journey towards the perfect steak.

  12. Good tip I reccomend is that you can always undercook and then put it back on if need be. Can’t do the opposite.

    This isn’t burnt, it’s an almost perfect well done.

    It takes great timing to not overdo well into extra well or hockey puck territory.

    It is of my opinion that well done is the true test of a grill master because, unlike most think especially here, well done is right on the delicate edge of cooked through without drying it out while medium offers a bit of a buffer on either side that is still considered good.

  14. Not so much burnt as just overcooked. Use a meat probe and pull the steak before it ever reaches 130 and this will never happen again.

  15. Invest in a thermometer. Ignore any chief that says use the finger poke test, most chefs just use a thermometer. Dry brining and patting it dry helps make a better crust with a good amount of oil. Next time you’ll crack it 🙂

    Get a sous vide! Not only are they easy to learn, they’re practically impossible to screw up with.

    Or learn a reverse sear if you want to learn with the tools you already have!

    Everyone starts somewhere! And you’ve got a decent starting point!

    That’s okay happens to the best of us. Get sidetracked go get a beer get distracted etc. Post pics of the next one. I don’t have any steak sauce in my house but I would toss some on it and eat it. Live and learn.

    I’m a well done kinda guy and I love what you did.

    Just remember that to finish with the right cook and char level, reverse the temperature to the level of cook: blue rare is a burning hot pan so it crusts without cooking very much, rare is less so it can be on the pan for a little while before crusting, medium is a hot pan that doesn’t smoke, well done needs to be slow enough that you can baste it a little before the surface starts to char.

    Anyone, even the waiter, could cook blue.

    It takes a line cook to make a good medium steak.

    It takes the head chef to make a good well done steak.

    And that’s why they try to promote the rare. Blood, puss, and decay products make up most of the taste for rare steaks, but the true flavour of the cut and the technique of the master chef are what shines through with the well done steaks.

    I’m surprised you made mushrooms and chimichurri. Usually that’s something people learned after mastering their steak.

    Add some Worcestershire or steak sauce and it’ll still be delicious. I’ve made 1000s of steaks and still overcook em sometimes, it’s no big deal despite what some snobs on here will tell you. It’s still steak!

    You didn’t even really burn the steak. You burned the seasoning on the steak. The steak itself doesn’t have much of an actual crust on the meat.

    This is an overcooked under seared steak. Just learn and keep trying.
