Keeping in mind that this is a Korean food thread, my advice is to eat first and ask questions later. 😂
Having said that, gonads sounds like a pretty good guess, like the brain-looking thing in some (exotic) Korean cod soups – 구니 (cod milt/sperm). I used to get grossed out by this, whereas I had no problems with female chicken embryos, fish roe (especially when it’s got a French word like caviar), etc.
