135 for 90 min. I encrusted the fillets with ground sage and rosemary. Seared in sesame oil in my cast iron and topped with cracked pepper and salt. Paired with a loaded potato and roasted veggies. Best steak I've ever had. Excuse the plastic cutlery, I'm lazy
