•125g Starter
•300ml water
•475 AP
•25g Rye
•12g salt

•Add water, starter and salt together mix
•Add flour mix until smooth and let rest 10-12hr
•dump onto lightly floured surface roll, shape till smooth
•place under bowl and allow to proof one hour
•place dutch oven, into oven, preheat to 500F
•once preheated place loaf into Dutch oven
•set onto baking sheet/stone to not burn bottom
•place in oven and lower heat to 400F
•bake one hour
•remove lid after one hour, bake additional 10m or to desired crust color
