Keema | 200-250g Mince Lamb or Beef
2 tbsp Ghee
1/2 diced Onion | 1 tbsp Ginger & Garlic paste
2 tsp Curry Powder
2 tbsp Tomato puree
1/2 tsp salt
coriander to garnish
Cheese sauce
2 tbsp Ghee
1 tbsp plain Flour
1/4 tsp Turmeric powder
1/4 tsp Chilli powder
1 cup milk
1 cup grated cheddar cheese
Toppings:
Diced Onion | Tomato | Cucumber | Jalapeño | Chopped Coriander | Tamarind sauce | Mango Chutney | Greek yogurt

Dang Latif. Long time sub and big fan but I was expecting a seriously simple recipe here. While that didn't happen this looks GOOD my friend. You know something? You're one of the few people I know that cooks for a living that "knows" how to use salt. FAR too many people think that using a "slight" overload of salt will add flavour. This in my opinion is where you can decide a good chef/cook than a bad one. A bad one will just throw salt in and depend on it, a good one will use the minimal salt and let the flavours and ingredients speak for themselves. Not saying to not salt but honestly, too much salt is so nasty to my mouth. I can see you know this at its basic level.

I did have a planned recipe to cook tortillas off in spice infused ghee. Then coat them with tandoori spices. Then ( when it eventually starts to melt ) paneer on top.
