I started a new job two weeks ago and I started doing meal prep because I get an actual lunch break now. I do bulk meal preps for my breakfasts and dinners. But as I get accustomed to my new job I was making turkey sandwiches. They’re easy and I just make them the night before. This week I’ve been using the toast oven to toast these sandwiches. I’m loving this. So I need recipes! What sandwiches should I do next week.
My current sandwich is turkey, Colby jack cheese, spicy guacamole, and pickled jalapenos.
I want something healthier. I pack this sandwich with carrots, an orange or banana, and a yogurt.

No sandwich advice, but that pineapple bag is bad ass.
I like toasty turkey with a little mayo, then add tomatoes and a slice of mozarella. I love the hot n cold between crispy bread.
Rotisserie chicken any cheese (I use pepperjack) bbq sauce and banana peppers.

I like making ground turkey or thinly sliced chicken breast banh mi sandwiches, they taste the best on French bread but you can use whatever you want. I cook the meat almost like a bulgogi but with less sugar, then add pickled carrots and daikon and thinly sliced onion, add sliced cucumber lots of cilantro and lime juice. Then I make a dipping sauce with fish sauce, water, rice vinegar, chopped Birds Eye chili, lime juice and a tiny bit of simple syrup. The stuff that takes the longest to prep (simple syrup, pickled veggies) I make in big batches so I have them in my fridge and can use it for whatever I want.
How about a flat bread pizza? Pack everything separately, easy to assemble, could add a meat if desired.

You can make a bunch and keep in the fridge for daily lunch, or you can freeze them, depending on the ingredients. I usually do just ham, cheese and mustard. But, there are lots of ideas out there. Mozzarella, tomato and basil
Bring a bagel, toast it and then add chicken or tuna salad, plus tomato and lettuce if you like.
you could do something philly cheesesteak inspired
Tortilla pizzas/tortilla fold over calzones!
Garlic naan bread (from the frozen section of Trader Joe’s if you have one available) with sauce, mozzarella and pizza toppings of your choice. So good.
So many choices! Just go with what you like!
