One of my favorite dishes. So easy to make. Tomatoes, garlic, onion powder, salt, red pepper flakes, cumin, paprika, herbs (I prefer basil) cottage cheese, and eggs. I think it’s traditionally made without cheese, or with feta or goat cheese. But I just love the texture and flavor of whole milk cottage cheese with this dish. All one pan, takes maybe 15-20 minutes. My husband and I eat this at least once a week. Great for any time of day. Usually I eat it with some nice crispy sourdough, but today I made some pita to go with it and now I don’t think I’ll be able to eat it any other way.
