i started making my starter about a week and a half ago and last night was the first time it doubled in size so i tried to bake my first loaf following a tutorial i watched on tiktok.
i took 200g of starter and 750g of warm water and mixed them together, then i added 22g of sea salt. I mixed that mixture with 1000g of bread flour. i mixed it all with a bread whisk and let it sit for about an hour. i let it sit in my baking corner of the kitchen, which is typically 72-75F (i have a countertop thermometer)
i did 4 stretch and folds q30min then let it rest for another hour on the counter. i divided it into 2 loaves and shaped it, then put it in a banneton with potato starch, covered with a kitchen towel in the fridge overnight. i left the second loaf on the counter to experiment with later.
about 8-10hrs later, i preheated my dutch oven for an hour at 450F and scored my loaf, then i baked it for 20min with the lid on at 450, then 15ish min with the lid off at 400F.
I think it was still a little too dense, but the taste was AMAZING!!
was my starter not quite ready, or did i not proof enough? I made 2 jars of starter so i still have starter to try again

Looks and sounds great to me. It’s a gorgeous loaf of bread, you should be proud of it.
It looks a little underbaked or else the starter is too young. I know all ovens are different, but my recipe is usually 45 total baking time.
