steak with salsa verde and maris piper chips

    simple salsa verde version

    * 1 cup flat-leaf parsley leaves
    * 2 garlic cloves, smashed
    * ½ cup extra-virgin olive oil
    * 2 tablespoons red wine vinegar
    * ¼ teaspoon red pepper flakes
    * 1 teaspoon lemon zest
    * 1 tablespoons lemon juice, (from 1 lemon), plus more to taste
    * ½ teaspoon sea salt, plus more to taste
    * ½ teaspoon freshly cracked black pepper, plus more to taste
