Hi! I’m new to the community here and just getting back into sourdough baking after a year-plus of moving and kitchen reno. I wanted to share some photos of my bakes this week—both country loaf (75% hydration following the recipe from Tartine Bread). The first two photos are of the loaf i baked this morning with caramelized onion, cold fermented in the fridge for 72ish hours (maybe a bit less). Super boingy with a nice mild sour flavor. And the last photo was baked same-day, earlier this week, with walnuts (that I foraged from a tree outside our apartment !) and cranberries.
