My technique is to dry brine overnight and then heat my skillet to around 400 (medium low) and cook until internal temp of 125 (usually 12 mins or so) flipping every minute. Tends to make a deep brown crust without any burning.

    Sear looks amazing. Can’t get a good enough eye on the cook tho. Looks medium. 10/10 would eat.

    Paper plate gang. I’m not cheap….i just have kids. Between all of the laundry and dishwashing, I’m looking for the path of least resistance. That’s paper plates baby. It literally will taste the same! I had a SRF ribeye a few nights back and while I sliced it on my boos block – my wife and I ate that shit on paper plates. Delicious.
