I frequent this Japanese restaurant near me, and whatever sauce/paste they give us for the ramen broth to make it spicy is divine. Does anyone recognize it or know where I can guy it? I've tried asking but there is a language barrier and I don't want to burden the servers anymore trying to figure it out!

It's a very vibrant red-orange color and flakes out perfectly in broth. I'm assuming it's some kind of chili sauce but I'm not certain, and I've never been able to find anything similar at my local Asian store.

    You’re going to need to break through that barrier, because there’s no way any of us can say exactly what that is, as it’s probably housemade. Having said that, it’s probably some form of rayu, which is chili flakes and oil (sometimes a combo of sesame and vegetable oils). But they also might be using some kind of bean paste which we can’t see in the photo. Just be persistent.

    the paste in the third photo right? I’m pretty sure it’s momji oroshi. Basically grated daikon radish, then grate red chili and mix it in. It’s delicious, it adds great texture and flavor to shabu shabu broth as well

  5. Look kinda like 豆板醤(tobanjan in Japanese or doubanjiang in Chinese) to me. A Sichuan seasoning
