This week on the menu for lunch: chicken fajita rice! Super easy to make and can be a one-pot meal (although I prefer to boil the rice separately) 😄 Haven't tried eating it with avocado and/or sour cream, bit I imagine that would be very nice!

Ingredients for 4-ish portions:
– One cup (uncooked) rice
– Olive oil
– 1 onion
– 1 bell pepper
– 200 gr tomato passata
– 1 chicken stock cube
– 230 gr black beans
– 150 gr corn
– 200 gr cooked chicken
– 130 gr grated cheese
– Lime juice
– Fajita seasoning (don't be shy with it, it adds so much flavour!)
– Salt
