My simple and delicious Blackberry Cobbler recipe, if you have Blackberries growing wild near you use them up! The rest of the time they are just a pain in the ass…

Ingredients: (makes two 4” diameter cobblers)
Filling
2 Cups/288g Blackberries
1/2 Cup/100g Sugar
1/2 Tbsp/6g Corn Starch
1/4 Cup/60ml Water

Cobbler Dough
1/2 Cup/100g AP Flour
1 Tbsp/12g Sugar
1/8 Tsp/.25g Vanilla Extract
1/8 Tsp/.25g Salt
1 Tsp/3g Baking Powder
2 Tbsp/14g Butter (cubed)
2 Tbsp/30ml warm Milk
2 Tbsp/30ml beaten egg (1/2 large egg)

Directions:
-Mix filling ingredients in microwave safe bowl, microwave in 30 second increments until thickened (1-2 minutes total) stirring mixture in between
-Mix dry ingredients for dough, add butter and incorporate to course crumbs, add rest of wet ingredients and mix
-Add filling then cobbler dough to baking dish of choice and bake at 375 degrees F until cobbler dough is done (test with a toothpick, about 20 minutes)
-Serve warm with ice cream or whip cream!
