Carrot cake recipe:
Dry Ingredients:
1 3/4 cups flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon

Wet Ingredients:
4 eggs
1 cup vegetable oil
¾ cup sugar
1 tsp vanilla extract
2 cups finely shredded carrots

Frosting:

½ brick 4oz 125ml softened cream cheese
1 cup icing sugar
1 tsp vanilla extract
pinch salt

Directions:

1. Shred 2 cups of carrots.
2. In a bowl mix together all the dry ingredients.
3. Preheat your oven to 350F
4. In a bowl mixture together all the wet ingredients.
5. Combine the wet and dry ingredients and mix to combine.
6. Grease a 9×5 baking dish. Instal a piece of parchment paper on the bottom and grease it as well.
7. Pour the ingredients into the baking dish.
8. Bake in oven for 45 mins
9. While the cake is cooking make the frosting. Mix all the ingredients in a stand mixer or use a handheld mixer. Set aside in the refrigerator until cake is baked.
10. Do a toothpick test to ensure cake is done. If toothpick comes out of the cake dry it is done.
11. Let it cool for 15 mins,
12. Put the frosting on the cake.
13. Serve and enjoy.
