Been running a snake with cherry wood, holding a solid 280f for 3.5 hours now. I wasn't planning on wrapping but I feel like the bark is forming up fast.

    Scratch test. If bark is set, wrap for about an hour. Then finish unwrapped to crisp it up a little. Use instant read thermometer to get the correct temp

    Thanks for the advice, everyone. I sprinkled some brown sugar on them in lieu of sauce and will pull them in about 30 minutes, that’ll be the 5 hour mark. No wrap

    I usually don’t wrap but I also cook low and slow at 225. 280 is a bit high in my opinion so I wouldn’t cook them for 5 hours at 280 or they’ll be over done

    I’m a recent no-wrap convert as well, always seems to turn out better

    Turn them to the opposite side of the burning coals to keep them off of direct heat. You’ll be fine.
