Made some chicken fajitas last night (from this video)[https://youtu.be/_xMuzwWg8kc?si=zjHzDXPYl8stnyuu] and cut the chicken in half so it would be mostly veg. Using those leftovers made a quick quesadilla for lunch with homemade salsa, pickled onions (recipe for both below) and some Mexican crema. Added some simple canned black beans and shredded cheddar.

Standard tomato salsa

4 roma tomatoes
1-2 jalapeño
Half a white onion
4-6 cloves garlic
Chopped leaves from half a bunch of cilantro
Juice of 1-2 limes
Salt to taste

Char the tomatoes and jalapeño in a dry pan. Blend with remaining ingredients and salt to taste. Don’t be afraid of the salt and lime.

Quick picked red onion

Thinly sliced large red onion
Apple cider vinegar
Salt
1 tb sugar
2 tb salt

Microwave onion for 30 seconds to soften. Add enough vinegar to go halfway up the onion. Add salt and sugar and toss. Taste and season as desired. Add enough hot water to barely cover the onions. Let sit 30 min for flavors to blend.

  1. Yep, this looks and sounds amazing! Just bought goodies to make chicken enchiladas but of course I could only buy a 30 pack of corn tortillas… so I needed this inspiration for what to do with them!
