Another Ugly Breakfast. But hacked to nutritional godliness.

    I jest.

    But I have been tinkering my morning porridge to contain better macros. 

    I had leftover buckwheat that I was using in my dinners throughout the week. I decided to use up the rest for a sweet breakfast.  

    It’s 160g (cooked) buckwheat 
    6oz unsweetened soy milk
     (Combined and cooked until thick) 

    Added 
     1 cube (28g) thawed frozen spinach  
    1/4 cup egg white 
    1 tbsp tvp 
    Cinnamon 

     Make sure to add the egg white near the end, off the heat, slowly and stirring it in. You don’t want scrambled eggs!  

    Topped with 1 tbsp walnuts, 1 banana, 1 tbsp maple syrup. 

    460 calories, 23g protein. I think I could increase the amounts of tvp and egg white to get to the desired 30g.

    I never thought to add spinach. I’ll have to try that.
