Pumpkin Pancakes

2 cups of flour
3 tsps of baking powder
1 tsp salt
1 ½ tsps. cinnamon
½ tsp ginger
½ tsp nutmeg
¼ cup brown sugar
¼ cup white sugar
1 tsp vanilla
1 cup pumpkin
2 lg eggs
4 TBSPS melted butter
1 ½ cups milk
Mix all of the liquid ingredients together in a large bowl and the dry ingredients in a separate bowl. Next pour half the dry ingredients into the wet and mix it in. Once most of the flour is mixed in then add the rest. Mix until the dry ingredients just disappear and then you are ready to cook them. You want to heat a pan to medium or a griddle to 375 and then pour out you batter. It’s a thick batter so you may have to flatten it out so that it can be cooked all the way through when you flip it over.

    I freeze extras & take out a couple when my husband wants some for dinner. A minute in the microwave & its ready to eat. Makes it so easy.

  3. That’s how I do them. Make a nice size batch and freeze them. The guys then make them like waffles in the toaster oven

  4. Hi Colleen, bring on the pumpkin all you want. I use to fix my bacon in the oven all the time it saves a lot on clean up. But I buy precooked and fix it in the microwave. The pancakes look awesome. I have reheated left over pancakes in the toaster, but they are better in the microwave. Hope you have a good day, evening.

  6. If you like peach and pumpkin together, how about taking peach jam and heating it up until it is a syrup? Might be good!! I don't like maple much either, so I always use a fruit syrup on my pancakes. Love boysenberry, but I can't find it any more for a price I'm willing to pay so I buy jams and heat them to syrup consistency and use them.

  8. Colleen, you have a very soothing voice! I enjoy your videos. On another note, YouTube is getting absolutely crazy with the length od the ads they play! One ad was over 8 minutes long in this video. I muted the volume and let it play while i did other things around the house. Just wanted to let you know. But that wont stop me from watchong your videos. I just hope others will continue to let the sds play so that you cam get paid for the content you provide to us!

  9. Those look amazing! I have to try them. When my sons were growing up I always made at least twice as many pancakes as I needed. My lids loved to use the leftovers instead of bread for their peanut butter and jelly sandwich lunches. I can imagine how wonderful the pumpkin pancakes would taste as sandwiches with with apple butter replacing the jelly.
