So I want to try something a bit different with the plethora of peppers I have this year, so I am making some Chicago style Giardiniera. While I am confident I could have made the recipe and just stuck it in the fridge, I wanted to water bath it as the recipe calls for just to be a bit safer with storage. I still plan to store in the refrigerator. Do you think this is okay? Could I store on the shelf if I wanted?

This recipe calls for grape seed oil. As far as I’m aware, there are no tested safe recipes, either pressure canning or water bath, that can use any sort of oil. I wouldn’t risk it, just eat it fresh.
No this is not a safe recipe.
Firstly it recommends heating jars in an oven. This is unsafe advised against by canning companies as it can cause heat damage and explode jars or weaken them. You do not need to sanitize jars if the water bath processing time is over 10 minutes.
Secondly it uses an huge amount of oil. Oil is not a safe canning ingredient except in certain safe tested recipes that contain tiny amounts.
Thirdly it has no variable processing time for different altitudes.
Unfortunately you should dispose of any jars of this recipe. Sorry
