The bakery I work at makes a lot of cinnamon style buns, here’s a new recipe testing today for a new special.
Enriched bun dough with cocoa powder, filled with overripe banana, dark chocolate spread and milk chocolate chips. Topped with a white chocolate mousse and hazelnut milk chocolate.

that sounds incredible. i would pipe or spread the mousse and drizzle the hazelnut milk chocolate on top
I’d probably ditch the white chocolate and add a crunchy element instead of it (caramelised hazelnut crumble or a mix of toasted hazelnut and crushed banana chips)

This sounds absolutely amazing. I agree with the comment about skipping white chocolate and adding a nut topping. But I would absolutely smash this. Or several.
