Great lunch idea for working in the heat …

1 box of garden rotini
1 bell pepper, i used orange
1 sweet italian pepper, i used red
2 scallions
2 ears of corn
1 red onion
1 head of broccoli

Coating:
Enough mayo to coat – 3ish heaping tablespoons
White wine vinegar to taste
Sugar to taste
A TON of fresh ground pepper
Shredded parmesan cheese

Finely chop all veggies and toss with cooked rotini. I boiled the corn first and then let it cool, and i added the broccoli to the pot when the penne cooked. All veggies came from farmers market except for the broccoli so the bill for this was quite small. Each tupperware portion only costs about $1 after all the math was done.

    Pasta salad so great and only gets better as time passes and the veggies and pasta absorb the dressing. Super easy to make too.
