Everything was roasted:
1 Whole medium Serrano chile
1 Small peeled carrot
1 Large clove of garlic
1/4 white onion
3 ripe medium roma tomatoes
White vinegar and salt to taste
You get hit with this sweet umami up front, spikes up with the acidity in the middle and then you get hit with a delayed spicy that warms your mouth, very well balanced.
