Continuing the weeknight cooking with a mix of new and usual recipes: 1) Meatless Monday bibimbap with portobello mushroom, cucumber, spinach, egg, and red bell peppers on rice.
2) Grilled chicken with a quinoa, chickpea, cucumber, and tomato salad.
3) Grilled balsamic skirt steak with a kitchen sink salad (romaine with cucumber, lettuce, carrot, onion, tomato, and avocado with fresh herbs and a store bought ranch dressing).
4) Baked ratatouille chicken – this is another Michael Symon recipe from fix it with food that turned out delicious and is going into the regular rotation.
5) Shrimp tacos from everyday Dorie – chipotle crema, guacamole, and a tomato-bell pepper-peach-mango salsa.
