Continuing my mission to make as many sandwiches from The Encyclopedia of Sandwiches (by Susan Russo) as I can, #7 is the veggie sandwich. Hummus, cucumber, radish, tomato, and sprouts on multi grain, it was like a salad in between 2 slices of bread. Nice and fresh! It's killing me that I mixed up the order of tomato and radish for the picture but oh well. Next time I would add hummus to both sides and wrap it or something to avoid veggie slide.

Veggie sandwich is a hard thing to balance, but it looks like this beauty has got all the right ingredients to make it work (though I would probably add red onion if it’s not already there).
