Crispy lentils:
250g Puy or beluga lentils
1.5 tbsp. Garlic powder
1/4 tsp. Chilli flakes
1 tsp. Oregano
EVOO

Tahini dressing:
80ml Runny light tahini
1.5 tbsp. Lemon juice
½ tsp. Maple syrup
Salt & pepper
Parsley
3 tbsp. Water

Roasted vegetables
1 plantain
1 aubergine
1 courgette
1 tbsp. cumin
EVOO
Salt & pepper

100g cherry tomatoes
Basmati rice
4 x eggs

BOWL 2: SPICY TUNA, GREEN BEAN & FETA SALAD BOWLS

Tuna mix:
200g Tuna
80g Greek yogurt
20g Parsley
¼ Red onion
4-6 Jarred or fresh Jalapeño slices
Salt & pepper
1.5 Lime juice
EVOO

150g Green beans
100g Flat breads
120g Feta
80g Olives
1 Cucumber
150g Lettuce
100g Cherry tomatoes

Vinegarette:
2 tbsp. Lemon juice
1 Garlic clove
1.5 tsp. Dijon mustard
½ tsp. Raw honey
Salt & pepper
1/3 cup Extra virgin olive oil

BOWL 3: CORN, BLACK BEAN AND QUINOA, SALMON & AVOCADO BOWL

Corn black bean quinoa:
180g Quinoa
2 corn on the cob
Black beans
1 pepper (red, green or mixed)
25g Coriander
2 x Spring onion
1.5 tbsp. Lime juice
EVOO
Salt & pepper

Salmon:
2 x Salmon fillets
1 tsp. honey
1 garlic clove
1/8 tsp. Smoked paprika
¼ tsp. Cayenne
½ tsp. Thyme
1 tsp. Cumin
1.5 tsp. Garlic powder
1.5 tbsp. Lime juice
Salt & pepper
1.5 tbsp. EVOO

Optional:
Avocado
Cooked beetroot
Rocket (arugula)

  13. loving these quick idea! this is the type of meals i make when i get back from work and dont want to be in the kitchen long. esp the tuna. lawrd i done ate alot of tuna these past few weeks 😅i think i want to try the quinoa salad and salmon! Ill be adding a chitpole ranch dressing made with kefir and a purple cabbage slaw
