Tried smoking a brisket on the Weber. 12lbs in about 12-13 hours
I use this 22” for everything but first time for this. I’d def do it different next time but still tasty!

Why “tried”?
Next time try using a disposable aluminum pan under the grate as a water pan/drip tray. I’ve always used the snake method yet still have an issue keeping temps down in the 225-240 range. My Weber likes to stay 265-300. Still makes a fine brisket.

How many times you add fuel for a 12-13 hr smoke without the snake method?

I used the indirect heat method, and I keep the vents open to a minimum to allow a little flow occasionally flipping every 2 hours once almost complete I do a little seer on the outside
