Followed the “early bird” recipe shown in the photos but after mixing the dough I let it sit on the counter 8 hours overnight instead of immediately shaping it and sticking it in the fridge. Did I overproof it? Lay into me, I’d love some constructive criticism! Starter is young (20 days old)

    I forgot to mention I took it out of the oven about 7min early because the ear was burning, and has a somewhat doughy texture on the inside I think because of that =/ tastes good though!

    Personally, I the crumb looks great. Two thoughts from a novice:

    1. Are you measuring you oven temp with something other than the built-in thermometer? They’re often inaccurate.
    2. If the crumb is too gummy for your liking, you might want to try lowering your hydration slightly (also currently struggling with this.)

    I don’t understand your comment about leaving it out for 8 hours. Was it 8 additional hours after you bulk ferment? Anyway looks pretty nice overall.
