    Looks pretty good. It’s a little dry for my personal tastes. A little more pasta water i think. Other than that… bravisimo

    A bit too dry / too much guanciale for my taste.
    A suggestion: Remove your skillet away [I mean far away] from heat source when there is still a small pool of liquid cream under. It wwill be ok after a few minutes. + Try using carbon steel pans, they cool off very quickly and your pasta won’t dry off and you have better temp control.
