I personally love fresh oregano with chicken, but I bet rosemary is the crowd favorite to win.

Rosemary can be overpowering with a more subdued meat like chicken, basil is too mild especially when roasted, so I’m going to go with oregano.

No thyme or sage?

Casting my vote for rosemary, because it will hold up better roasted in foil then the other herbs will

Oregano.

I have my vote on rosemary- if nothing else because the others are less pronounced. Basil for pesto chicken but a pretty different variation.
Also try shallow-frying some rosemary. Surprisingly was in a Hello Fresh or similar recipe (I forget) but it’s not something I would have thought on myself. It gets super crispy and I could eat it on its own

I tend to associate and use rosemary only with Lamb, but I’ll take it as my pick because I think it will pair best with the balsamic.
