Mother-in-law bought a beef eye round and asked me to cook it… how’d I do?

    I’ve never used an eye for anything but jerky. Is it not arbitrarily tough medium rare?

  4. Id go rare and slice thinner. Thinner sciles of eye of the round make for much more pleasant eating experience.

    For the cook:
    Dry brine overnight, then garlic powder, onion powder and black pepper right before cooking.
    In the oven at 225 for about 2 hrs, turned the oven off when temp hit ~125 internal. Carryover brought it to 130.
    Pulled, rested for about 20 minutes while the grill got going. Seared on cast iron skillet with peanut oil, as hot as I could go, rolling continuously.
    Tried to slice as thin as I could, don’t have a deli slicer. The beef was actually super tender and not hard to eat at all despite the thickness.

    Overall, would do again, maybe in the smoker next time!
