These were the leftovers. Salted and let to dry 24hrs in the fridge. Baking powder coating as they hit the grill.

Best wings I ever made was by accident on the grill. Some latecomers to a cookout brought some marinated wings and since there was still plenty of food left, I threw the wings on the grill and promptly forgot about them. By that time the coals were already dying so I put them on direct heat. After an hour I suddenly remembered the wings and expected a charred mess but instead the fat rendered perfectly and the results were mahogany colored beauties with a papery crispy skin.
