I’ve been making ice cream cookie sandwiches the last two summers and to accommodate people for birthday parties I started making larger versions. Ice cream cookie cakes using my 9 inch pans. Here’s a funfetti cookie with vanilla ice cream

May we have a recipe (especially for the cookie)? Would love to make a riff on this for my husband’s birthday.

How do you get it to cut so nicely? I feel like it would be soooo hard to cut frozen, or it would squish out the sides.

We would love your recipe for the funfetti cake!

This makes one. So double the recipe for two

    Ingredients

    1 3/4 cups (246g) all-purpose flour
    1 tsp baking powder
    1/2 tsp salt
    3/4 cup + 2 Tbsp (175g) granulated sugar
    3/4 cup (170g) unsalted butter
    1 large egg
    1 tsp vanilla extract
    1/2 tsp almond extract
1/4 cup + 1 Tbsp rainbow jimmies sprinkles, divided

    Directions

Preheat oven to 350 degrees. Butter a light colored (not dark coated) 9-inch round cake pan or springform pan and line with parchment paper.

In a medium mixing bowl whisk together flour, baking powder, and salt.

In a separate large mixing bowl using an electric hand mixer blend together butter and granulated sugar until combined. Increase to high speed and beat until pale and fluffy.

Mix in egg, vanilla extract and almond extract.
Add flour mixture and blend until combined. Fold in 1/4 cup jimmies sprinkles.

Spread and press batter into prepared cake pan then evenly sprinkle over remaining 1 Tbsp sprinkles.

Bake in preheated oven until cookie edges are set and center appears slightly under-baked about 19 to 22 minutes. Let cool completely then frost.

Yum! I see you’ve graciously shared your cookie recipe (thanks!), would you be amenable to sharing your ice cream recipe, too?

I’d love to do this with chocolate cookies instead , would you happen to have a recipe I can try?
