Hello fellow Sourdoughers! This is my first attempt at a sourdough bread! I was hoping you guys can help me figure out how I did? I can’t tell if it’s underproofed, overproofed or the gumminess level since I have nothing to compare it too. Any advice or feedback would be greatly appreciated!
The recipe is from Prindle.Sourdough from tiktok (specifically her loaf pan recipe) and the measurements are:
125g starter
300g water
500g flour
10g salt
I did about 4 slap and folds and coils every half an hour. I kept it on the counter for three hours then dumped it into a loaf pan and placed it in the fridge for 18 hours. Finally, I baked it at 230c for 30 minutes with a foil covering it, then uncovered for another 15 minutes. I cut it open after an hour and a half because I simply couldn’t wait any longer!

Dang, that looks delish! Nailed it. Maybe slightly on the underproofed side judging by the few bigger tunnels, but this is really good. If you haven’t had sourdough before, it’s more chewy than your typical yeasted bread. Good thing is that it’s easier to spread butter without tearing the crumb apart.
