Greek Salad Ingredients:
▢ 1 head romaine lettuce chopped
▢ 1 seedless cucumber chopped
▢ 1 green bell pepper chopped
▢ 2 Roma tomatoes cored and cut into wedges
▢ ⅓ cup red onion thinly sliced
▢ ⅓ cup kalamata olives pitted
▢ 6-8 ounces tofu feta cheese

Tofu Feta Cheese Ingredients
Brine
▢ 14 ounces firm tofu drained (no need to press it) and cut into four planks or into small cubes
▢ 2 cups water
▢ ½ cup vinegar apple cider or red wine vinegar
▢ ½ teaspoon sea salt
▢ 4 cloves garlic thinly sliced
Marinade
▢ 1 tablespoon miso paste
▢ 1 tablespoon dried oregano
▢ 2 tablespoons lemon juice
▢ 2 tablespoons red wine vinegar or apple cider vinegar
▢ ½ cup olive brine from a can of olives preferably kalamata olives, but any will work

Greek Dressing Ingredients:
▢ ¼ cup red wine vinegar
▢ 2 tablespoons water or olive oil
▢ 1 tablespoon dijon mustard
▢ 1 tablespoon agave or sugar
▢ 1 clove garlic crushed
▢ 1 teaspoon dried oregano
▢ ¼ teaspoon sea salt
▢ ⅛ teaspoon freshly ground black pepper
