[***Brown butter chocolate chip cookies***](https://www.ambitiouskitchen.com/brown-butter-chocolate-chip-cookies/) – 10/10 cookie. I probably have 50+ frozen cookie balls in the freezer. Brown butter is what you’re missing to create your fav chocolate chip cookie if you haven’t tried it.
***Garlic pull apart bread***
* [Potato bread](https://breadbyelise.com/potato-burger-buns/) recipe I used. Any dinner roll/bun recipe will work. Or you can look at your bakery section for brioche buns that you gotta cut yourself to save yourself some time. * Garlic butter – 1 large head of roasted garlic, 1 stick of butter, garlic powder, pinch of italian dried herbs, fresh parsley, parmesan * Cheese – mozzarella, provolone, white cheddar, and parmesan
1. Using a serrated knife cut across the bread in lines roughly 1/2″ apart, then cut across those lines, creating little squares. Be careful not to cut completely through the bread. 2. Brush garlic butter all over the bread, being sure to get inside all of the cut crevices / crosshatches. 3. Stuff cheese between the crosshatches 4. 400F for 15-20 mins or until cheese is melty and the top is golden brown
***Lasagna***
***Bolognese***
* Olive oil + butter * 4oz pancetta, 1lb ground beef, 1lb italian sausage * 1 medium yellow onion diced, 2 celery stalks diced, 2 carrots diced, 1 head of garlic * 6oz tomato paste, 28oz San Marzano tomatoes * 2 cups of red win, 1 cup of whole milk * Salt, pepper + bay leaf
1. Heat butter and oil in large dutch oven. Once hot, render pancetta until crispy. Set pancetta aside 2. Add both ground beef and sausage. Let cook without touching for 5-10 mins. You want the meat to brown. Once meat is caramelized, stir and break up with wooden spoon. Set meat aside. 3. There should be some fat leftover from meat, if not, add a tbsp of butter 4. Add all of the veggies except garlic to dutch oven with a pinch of salt. Cook until veggies are soft and tender. Add garlic and cook for 60 seconds or until fragrant. 5. Add beef and sausage back to pot. Add the entire can of tomato paste and stir. Let the paste caramelized and coat the bottom of the pan. Deglaze with red wine. Scrapping bottom to pick up the fond. 6. Add pancetta, San Marzano, milk, and bay leaf to pot. Let mixture come to boil and drop down to a simmer. 7. Simmer for 2-4 hours. Taste for salt and pepper
**Bechamel**
* 90g butter * 90g all purpose flour * 850ml whole milk * pinch of kosher salt * freshly grated nutmeg
1. Starting with the roux, melt the butter over medium-high heat. Once melted, add flour. Mix together until you can smell the flour getting toasty. Take off heat. 2. While whisking, add a little bit of a milk at a time until all milk is incorporated. Whisking the entire time 3. Return to heat and whisk over medium-high heat for 10-15 mins until thickened. You’ll know it’s thick enough when it coats the back of the spoon. Season with salt and freshly grated nutmeg.
1. Soak your noodles in warm water for 15-20 mins before you’re ready to assemble 2. Ladle sauce at the bottom of your 9×13 pan. One layer of lasagna noodles. One layer of Bolognese. One layer of bechamel. One layer of mozzarella & parmesan. Rinse and repeat until all of your lasagna noodles are used up/what will fit in your pan. 3. Add extra mozzarella and parmesan to the top of the lasagna. Bake at 350F for 30-45 mins. Until cheese is melty and golden brown. Place lasagna on top of cookie sheet in case there’s spillage.
