This one is tasty, but takes a bit longer to cook than I like.
Steak is cut into thin strips, seasoned and basted in butter in a pan to cook(where most of the calories come from). The asparagus is lightly coated in olive oil and sautéd until soft. While doing that, roast the fingerling potatoes with garlic (and seasoning of your choice).
Most importantly, top with Trader Joe’s chimichurri sauce.
Can usually make 5-6 servings from a bag of potatoes, a bunch of asparagus, and 1/1.5lb of steak.
