Made dinner tonight, had an issue with my smoker not wanting to push past 450 so I didn’t get the marks I normally do and sort of developed a bark too from the indirect time. Strip steaks that were dry aged for a week. Pulled at 125, but didn’t come up much in temp. Was expecting 130 or above but it didn’t come up much due to the low indirect heat. Luckily I made one 130/133 after resting which she enjoyed more.
We all ate it up, and it had the taste similar to a smoked prime rib (the smoke part was not intentional).
Not my best steak iv made this month but I loved the color they came out.

This is not too rare. You controlled the preparation and smoking skillfully. You can see it in the resulting colors and texture. This was handled with care and attention. I can’t think of a thing to improve. It’s really beautiful work, tasty and nutritious too!
