They’re taking a very long time to turn red. Will they turn red if I pick them and bring them indoors (like tomatoes?)

Like tomatoes, there is a good chance they will continue to ripen if they’re actually blushing. Yours are very green. I would wait. And if you’re worried about the weather, consider just moving the whole plant indoors.
